Prawn and mango salad

Serves: 3-4

Salad:

  • 1 mango

  • 1 cucumber, peeled

  • 1 packet rocket

  • Handful of mint

  • 500g prawns, peeled and cooked

  • Handful of macadamias

  • 1T olive oil

Sauce

  • 1/3 cup plain Greek yoghurt

  • 1/4 cup mango chutney

  • 2 tsp chilli sauce

  1. Make sauce by mixing ingredients together in a bowl.

  2. Cook prawns in a fry pan on medium heat with oil for 2 mins each side.

  3. Assemble salad as desired.

  4. Serve with your choice of roast veg and eat and enjoy!
