Prawn and mango salad
Serves: 3-4
Salad:
- 1 mango 
- 1 cucumber, peeled 
- 1 packet rocket 
- Handful of mint 
- 500g prawns, peeled and cooked 
- Handful of macadamias 
- 1T olive oil 
Sauce
- 1/3 cup plain Greek yoghurt 
- 1/4 cup mango chutney 
- 2 tsp chilli sauce 
- Make sauce by mixing ingredients together in a bowl. 
- Cook prawns in a fry pan on medium heat with oil for 2 mins each side. 
- Assemble salad as desired.
