Chicken and halloumi salad

Serves 2-3

  • 1 cup mixed leafy greens

  • 1 carrot, finely chopped

  • 1 celery stick, finely chopped

  • 4 cherry tomatoes, finely chopped

  • 1.5 cups your choice pasta

  • 4 slices of halloumi (salt reduced)

  • 1 chicken fillet

  1. Cook pasta until al dente

  2. Boil chicken for 10 mins or until cooked through

  3. Add salad, pasta and chicken to a bowl and mix well

  4. Cook halloumi for 2 mins each side using a frying pan and add to salad

  5. Garnish with your choice of dressing and seasoning

  6. Eat and enjoy!
